意大利面和其它...祝大家有個愉快周未~~~

最近買了幾樣不同的意大利粉,這些意粉我未吃過就是覺得它們得意.

菠菜醬意粉

這個面是用菠菜醬做底的,
材料,蝴蝶結意粉 菠菜 小小水 奶油 (cream) 蒜頭 鹽 胡椒粉 熟了的煙肉
煮滾煲水,放意粉煮8分鐘,拿起瀝干,菠菜洗干淨,煮一煲大熱水 (准备好一盆冰水),把菠菜放在大熱水里一陣拿起瀝干,馬上放在冰水里幾分鐘,拿起瀝干切成小塊,放在攪拌機加小小水打成蓉.熱鑊下橄榄油和蒜頭炒香,放下菠菜蓉煮滾,下奶油,鹽,胡椒粉調味,在另一只鑊用橄榄油把意粉炒熱,把菠醬放在碟里,再把意粉和煙肉放上面即成.好吃!

肉醬釀意粉

材料: 大蜆殼面或其它可以做釀的面 自製蕃茄醬 牛肉碎 洋蔥 蕃茄paste 毛菇 蒜頭 香葉 干oregano 監 胡椒粉
焗爐預熱350F, 把大蜆殼面滾水煮4分鐘 拿起放在毛巾上,熱鑊下油炒香洋蔥和蒜頭,下牛肉碎炒熟,把所有其它材料放下和牛肉一起煮大約30分鐘,調味待涼,然后用匙更釀進蜆殼里,一個個放在焗盆,把用剩的醬放在蜆殼用圍,用foil蓋著,放入焗爐焗30至40分鐘即成.

黃蕃茄醬意粉

材料,意粉 蕃茄 小小水 濃蕃茄醬 蒜頭 鹽 胡椒粉
煮滾煲水,放意粉煮8分鐘,拿起瀝干,蕃茄切個十字在皮上 ,煮一煲大熱水 (准备好一盆冰水),把蕃茄放在滾水里一陣拿起,馬上放在冰水里幾分鐘,拿起去皮,放在攪拌機加小小水打成蓉.熱鑊下橄榄油和蒜頭炒香,放下蕃茄蓉和濃蕃茄醬煮滾,下,鹽,胡椒粉調味,在另一只鑊用橄榄油把意粉炒熱,把蕃茄醬放在鑊里和意粉一起炒幾分鐘,調味即成.

羊肚菌(morels)意粉

這是羊肚菌醬的做法.做好之不把它和意粉放在一起即成.煮意粉就照舊方法做就ok.
材料: 羊肚菌洗干淨(有很多沙的) 牛油 小紅蔥頭切碎 白酒 雞湯 奶油(heavy cream) 鹽 黑胡椒粉
熱鑊下牛油 小紅蔥頭炒香,放入羊肚菌,鹽,煮几分鐘,加白洒一杯煮到只剩半杯加二杯雞湯和一杯奶油,煮到濃大約20分鐘即成.

蠔油東菇炆雞翼

材料: 雞翼 鮮東菇 薑 蒜頭 鹽 蠔油 生抽 老抽 水 豆粉水
熱鑊下油, 薑 蒜頭爆香,下雞翼 生抽 老抽,把雞翼炒幾分鐘,下鮮東菇 鹽 蠔油 水,蓋蓋煮20分鐘,下豆粉水,調味即成.

香煎煙肉包蘆筍

這個菜好吃又易做
材料: 煙肉 蘆筍
蘆筍要成條的,老的那邊用刨刨去外皮就可以,用煙內把蘆筍一枝枝包住,放在鑊里把四面煎香即成. (不用下油,煙肉自己會出油)

韓國泡菜魚湯

去吃韓國餐,叫了這個湯 (圖1)剛好家里醃了泡菜和有其它材料,又學做了.
材料: 龍利魚 東菇 包魚菇 韓國泡菜 韓國辣椒粉 雞湯或水 蒜頭
把沙鍋燒熱大油,蒜頭炒香再下東菇 包魚菇 韓國泡菜 韓國辣椒粉 雞湯或水煮滾,最后下龍利魚塊調味即成.
note:今次我沒有下鹽,因我用雞湯和那些泡菜已夠咸了.

蘋果醋沙拉醬

這個蘋果醋沙拉醬也很好味又簡單,只用蘋果醋 橄欖油 鹽 黑胡椒攪勻即成.
用兩種不同的櫻桃蕃茄和意大利芫茜做沙拉,把蘋果醋沙拉醬淋上面即可.

買了這個燒章魚的鑊,一直都沒有機會做,昨天把它找了出來,今天就做了.

又做了照燒雞和加州卷,今次的加州卷做得最好吃,原因是去吃sushi boat的時候,看他們怎樣做.那些蟹肉要下很多沙拉醬的.
