交作业 – 私房菜和其它
在這里要多謝suzie-q 納米生物和文學城的 私房菜 ,在這里我可以學到很多中國各地不同的菜,以前想吃的菜要去旅行才可以吃到,現在想吃的只要停留在私房就什么菜都有得吃了.

這是一魚三吃的其中之一潑辣魚
這個recipe很好吃,我沒有猫鱼肉片,剛好朋友送了這條魚給我,就把它做潑辣魚了.
猫鱼肉片, 用酒, 白胡椒, 盐, 蛋清, 淀粉, 姜丝, 抓好, 冰箱待会儿.油锅小火煸炒香, 葱段, 姜丝, 花椒.鸡汤两罐,再对一杯水, 加一点酒, 盐, 味精, 一点糖提鲜(不是要吃甜味), 中火烧滚,捞出香料来,这时另起一小锅到入冷油和干辣椒,慢火熬香, 变褐红色,但不要焦,改中小火, 一片一片往里加鱼片, 不要搅动, 略烫一下,鱼片变色, 加入泡过冷水沥干的粉丝, 一滚就装大碗, 马上把热油泡香的干辣浇上, 开吃.

酱拌茄子-

嫩茄子切条泡过盐水,沥干,
平底不粘锅放一点油, 加茄子, 加一点水, 盖盖, 烧软, 中间翻个面, 装盘,
锅里用油炒香葱姜蒜末, 加剁椒, 辣豆瓣酱, 耗油, 糖, 勾欠, 浇在茄子上. 撒葱丝香菜拌匀吃.

也是從suzie-q那里學的,很好吃~

纳米生物的修正主义的牛肉烧土豆

切好的牛肉冒血。这过程太不堪入目,就没照像。冒过的牛肉用水一块一块地洗得干干净净,沥干水备用。锅热入油,下一把花椒,小火煸到六成糊时,赶出花椒,只留花椒油。纳米生物烹饪风格一贯是少油,如果一盘菜装盘后,用眼可见余油,那么俺就认为是失败的。当然有些特殊的菜整个就是泡在油里的,那就另说了。请相信,照片上这点油足够2斤8量牛肉加2斤土豆的!肉下锅大火翻炒1分钟,加少量糖(多了就不北方了),胡椒粉,姜粉,酱油,料酒,再翻炒几分钟。加水没过牛肉,并加大料的一个角,适量辣椒(爱吃辣的多加,不爱吃的不加)和盐。盖锅,小火收汤。一边烧着牛肉,一边准备其他的配料。土豆刮皮切成形状似牛肉的片状小块儿,去淀粉。香菇,黄花菜泡开洗净。大概50分钟后,牛肉水快干了,也基本烂了,开锅下土豆,香菇,黄花菜。水如果太少了就再加点儿,颜色要是不够深就来点老抽调色。再次盖锅,闷烧。此时拨蒜,切蒜。既然是北方口味,蒜就要狠下,而且要再出锅前下锅,否则早下了,蒜就熟了,熟了就没味儿了,没味儿了,嘴就不臭了,风格就不“北方”了。下味精出锅。这个盘子可是一个鬼子们拌凉菜(所谓沙拉)用的超大超深盘呀!口径30厘米的!足足2斤8量肉,2斤土豆,外加香菇和黄花菜。俺们两口喝着啤酒一会就扫荡一空。各自心中暗喜道,“嘿嘿,来生还当北方人!”

日式香煎魚第二吃法
材料: 魚塊, 鹽,胡椒粉.
汁料: 生抽, 檸檬汁, 糖 (把這三樣,煮成汁)味道自已調.
用鹽和胡椒粉醃魚,熱鑊下油,把魚,煎熟,把汁料放在煎香的魚上即成.

翠玉瓜包魚塊第三吃法
一魚三吃, 朋友送了條rainbow trout給我,一看就知什么人送的了.沒頭的.就是白人朋友送的.中國人喜歡吃骨,所以一這要有頭.
材料:魚塊, 翠玉瓜切薄片, 鹽, 胡椒粉
汁料: 生抽, 檸檬汁, 糖 (把這三樣,煮成汁)味道自已調.
用鹽和胡椒粉醃魚,用翠玉瓜片把魚包好,熱鑊下油,把魚煎熟,把汁料放在煎香的魚上即成.
這是我吃的,老公吃了日式香煎魚,他很喜歡吃.

材料: 豬扒 蕃茄 洋蔥 紅 綠甜椒 鹽 糖胡椒粉.
豬扒用鹽胡椒粉醃過煎香兩面,(不用煎熟)放在焗盆,蕃茄去皮用攪伴機打成醬,把一半蕃茄醬倒在豬扒上焗30分鐘350F,在另一個鑊炒香洋蔥下 紅 綠甜椒,和另一半蕃茄醬,鹽,糖調味放在焗好的豬扒上即成.
note: 豬扒不要過熟.
