韭菜盒子(Jiu-cai fried HeZi)
Ingredients (for 3 people)
Ground Pork 猪肉馅 1 lb
Tool:
One large flat nonstick pan (electric pan is preferred since it is easier to control the temperature)
Make the filling:
Prepare the vegetable. Clean the chive by picking out the rotted or yellow leaves and wash them well. Cut chives into about 1/3 inch long. Put them into a large bowl. Add the sesame oil (olive oil) and mix it well.
Prepare the meat. In a medium bowl, put in ground pork. Add cold water (chicken broth) and mix them well in one direction (like clockwise).
Add pepper powder, ginger powder, salt, and soy sauce to the meat and mix them well. Add chopped noodle, chopped fried egg and mix them well.
When you're ready to make the dumplings, then put the seasoned meat into the vegetable bowel and mix them well.
Make the HeZi (dumplings)
Take 3 dumpling wrappers and add few water in between。 Roll then into one big wrapper with thin edge. Put the filling and make a large dumpling by folding it up. Wet the edge to make it easy to close.
Cooking Steps
Put the pan on high temperature till it's hot. Then turn down the stove to medium (about 350F).
Add about 1 tsp vegetable oil, enough to barely cover the bottom of the pan.
Lay 3-4 HeZi (dumplings) in (make sure they don't touch each other). Add 1/4 cup water. Cover the pan.
It should take about 7-10 min to have one side brown. Adjust the temperature as needed.
Then flip them and cover the pan to brown the other said (no need to add water for the 2nd side). Adjust the temperature between medium and high to brown the 2nd side around 5 min.
Tips:
o Put the left noodle into a ziplock and put it in the freezer for later usage.
