法式炖牛肉晚餐 - Beef Provencale, French Bread, Crepes

对不起, 又忙了一阵, 好不容易整理出这个贴, 希望大家喜欢.


法式炖牛肉晚餐 - Beef Provencale, French Bread, Crepes


材料:

Beef Chuck roast, 牛肉, 4+ LB , 切方块,

腌肉料:
Thyme, 百里香
Rosemary, 迷迭香,
Parsley, 巴西利
Onion, 洋葱,
Oil, 菜油,
Red wine, 红酒,

Bacon fat, 培根熬的油,
Onion,洋葱, 切碎,
Carrots, 胡萝卜,刨皮, 切段,
西芹, 切碎,
Garlic, 切碎,
腌黑橄榄, Kalamata olives
番茄, tomato,
香叶,Bay leaves
鸡汤,一罐
盐, 黑胡椒,
巴西利, Parsley 切碎,

做法:


- 牛肉用腌肉料腌过夜, 沥干,

- 加热可进烤箱的重铁锅 , 倒入培根慢慢熬出油, 取出, 留油, 分两批放入牛肉, 煎金黄, 取出,

- 放洋葱, 大蒜, 炒软, 加西芹炒软, 加番茄,牛肉, 拌炒匀,

- 倒入腌过肉的酒, 加鸡汤, 把锅底的焦渣刮松, 加香叶, 烧滚, 盖盖,

- 进300F烤箱底层烤一小时, 加入胡萝卜, 黑橄榄, 盖盖, 再炖烤一小时, 到肉烂.

- 烤箱取出放炉头上,开火, 同时取出Bay leaves, Thyme 梗, 和撇掉油, 再拌入盐, 黑胡椒, 开盖, 大火收汁,

- 吃前拌入 parsley, 好了.

配菜:

奶油烤西兰花 -

奶油炒香面粉, 加牛奶和奶酪, 盐, 大量的黑胡椒, 溶化后浇在开水川过的西兰花上, 进400F烤箱, 烤15-20分钟,

土豆泥-

红皮土豆用冷水煮熟后沥干水, 加牛奶, 奶油, 盐, 黑胡椒, 酸奶油, 拌匀.

法国面包-

肥引子(sponge starter):

1 cup water
1/2 teaspoon yeast
1 1/2 cups Bread Flour

面包料:

All of the sponge starter
1 cup water,
3/4 teaspoon yeast
1 tablespoon sugar
3 3/4 cups Bread Flour
1 teaspoons salt

先用面包机做肥引子, 留在机器里, 室内过一天一夜, 24小时, 再加入面包料, 接着用面包机再揉面和发面, 取出, 排汽, 揉成团, 放入抹了油的盆里, 保鲜膜盖好再发酵,

整型, 再醒40-50 分钟, 用快刀画刀口, 面包表面喷水,

预热烤箱 475F, 放面包进烤箱, 马上改到 425F, 15分钟内对烤箱喷三次水, 烤30分种, 敲敲有空空的响声就好了.

甜点- crepe

2 杯全脂牛奶, 1 ½ 杯面粉, 两个鸡蛋, 1 大勺白 糖, 1 小勺香草精,

用blender 打匀, 进冰箱放一小时以上.

热锅, 薄薄的擦点奶油, 倒入2-3勺的浆, 用木棍转推开面浆, 薄薄的一层, 等面上略起泡, 用平铲挑起翻面, 几秒种就好了, 对叠两次, 放盘里, 加奶油红糖煮水果, 和橙味酒香糖浆, 配点冰期淋吃,

奶油红糖水果 -

奶油红糖煎的香蕉和萍果,

橙味酒香糖浆 –

烧煮奶油, 白糖, 柠檬皮, 新鲜挤的橙汁和柠檬汁, 最后加一点橙味酒,
